EXTRÁCT, extracte, s.n. 1. (Ieşit din uz) Copie a unui act, scoasă dintr-un registru (de stare civilă). 2. Substanţă sau amestec de substanţe chimice preparat prin concentrarea până la un anumit grad a produselor extrase din diferite materii vegetale sau animale, proaspete sau uscate. – Din lat. extractus, germ. Extrakt.

EXTRACT, extracte, s.n. (În gastronomie) Preparat concentrat, cu aspect siropos sau în stare solidă (pulbere, făină, granule), extras din materii vegetale sau animale prin evaporarea parţială sau totală a lichidului dintr-o fiertură. În gastronomie se utilizează extracte lichide (sosuri concentrate) sau solide (concentrate de carne), pentru a da gust şi consistenţă preparatelor (supe, sosuri).
